Lemon glazed Swai fish
Serves: 3-4
Ingredients:
2lb Swai fillets
3Tbsp olive oil
1Tbsp butter
1 lemon
1Tbsp capers
2tsp corn starch
1/4 cup water
Directions:

melt butter in large sauce pan on low heat

add the juice of lemon into butter. mix well

add remaining lemon pepper
-
in a small cup mix cornstarch and water. pour mixture into sauce

stir until sauce thickens
-
add capers. let cook for 4 minutes. place lid on glaze to keep warm
Prepare Fish:
-
heat skillet on medium-high heat. add 1Tbsp of olive oil

when skillet is hot add fillets
-
sear fillets for 2 minutes on both sides (over cooking can cause the fish to be dry)

pour glaze over fish and serve
