Beef & Pork Tostadas
 

 

 

Salsa Ingredients:

2 large tomatoes diced

1 large onion diced

1 jalapeno diced

Juice of 1 lime

¼ cup chopped cilantro or ( 1 Tbsp Cathy's Cilantro)

2 tbsp white vinegar

¼ tsp pepper

¼ tsp salt

 

Instructions:

Mix all ingredients in a bowl and cover and place in refrigerator until ready to assemble tostadas.

 

 

Ingredients for meat:

2 ½ lb country ribs

2 ½ lb beef carne picada extra thin

2 tbsp tomato bouillon

1 tsp Cathy's Cumin

1 tsp Tones Garlic Powder

½ tsp Tones Chilli Powder

1 tsp salt

½ tsp ground coriander

 

Instructions:

Place all seasonings in a bowl and mix well. Place both beef and pork into a crock pot and add seasonings. Turn crock pot on high and cook for 6 hours or until meat is very tender.

 

Ingredients for rice:

2 cups uncooked white rice
1/4 cup vegetable oil
4 cups water or chicken broth
1 large onion, diced
1 large tomato, diced
1/3 cup cilantro, chopped (add at the end)
1 tablespoon seasoned salt
1 tsp. garlic powder
1 Tbsp Cathy's Cumin
2 Tbsp tomato bouillon
1 Tbsp sugar
1 Tbsp brown gravy mix

 

Instructions:

Dice onion and tomato; set aside. Put rice in a bowl and add all of the spices. Pour oil into a larger pan and add the onion.

Cook until onion is tender; add uncooked rice and all of the spices. Cook for 1 minute; add diced tomato and stir. Add 4 cups water; bring to a boil. Lower heat to simmer, cover and cook for 20 minutes until rice is tender. Add chopped cilantro. This rice can also be served as a side dish.

Tostadas Ingredients:

1 pack Mission White Corn Tortillas

2 cups vegetable oil

2 8oz packs of Monterey Jack shredded cheese

1 can of refried beans

8oz Daisy Brand Sour Cream

2 cups of shredded lettuce

 

Instructions:    Preheat oven 375 degrees

1.      Pour oil in to frying pan and heat on medium high. When grease is hot fry tortilla one at a time. Making sure tortilla is fried hard not burnt so that tostada will be crispy. Place fried tortilla on cookie rack.

2.    Warm refried beans in a pan.

3.    Take one fried tortilla and spread 2 tbsp of refried beans on top and sprinkle with cheese. Place in oven for 3 minutes or until cheese has melted. Remove from oven.

4.    Layer tortilla with rice, meat, lettuce, salsa, sour cream and more cheese.
