Cathy's TGIF
Serves 4
Ingredients:
1 loaf of parmesan garlic Italian bread
Dressing:
3 tbsp mayo
1 ½ tsp store prepared pesto
1 Tbsp Tones minced garlic
1 tsp olive oil
1 red chili seeded and finely chopped
1 tsp red wine vinegar
Meat:
½ lb corned beef
½ lb pastrami
½ lb hard salami
½ lb ham
½ lb sliced baby Swiss cheese
½ lb havarti cheese
1 small red onion thinly sliced
1/4 cup sliced kosher pickles
1 small tomato thinly sliced
3 leaves of green leaf lettuce
Tooth picks
1 sandwich bag
Directions:
- Preheat oven to Broil
- Mix all dressing ingredients in bowl
- Slice loaf in half length wise
- Brush half of mixture on insides of loaf
- Toast bread to desired brownness ( bread brown quickly keep an watchful eye)
- remove bread from oven
- layer meat on one side of loaf
- Layer cheese on top of meat
- Place loaf with meat back in oven on bottom rack until cheese is slightly browner. Remove from oven. Sprinlke melted cheese with Cathy's Basil.
- Place remaining dressing in sandwich bag, squeeze dressing to corner and cut tip. Squeeze dressing on top of cheese
- Layer with onions, pickles, tomatoes, and lettuce
- Cut into small sandwiches and place toothpick in top of sandwich to hold together
